There has been a need for a textbook on FOOD TECHNOLOGY which has been
most difficult to fulfill. The reasons include the fact that no one has all the knowledge
required to write such a book. Fortunately, a number of excellent RUS on
FOOD SCIENCE are now available.
A practical book on what FOOD TECHNOLOGY is all about requires that it be an
edited volume, summarizing the knowledge of scores of experts in the various
fields involved. And, a second requirement is that the book be limited to basics, to
keep it contained to a reasonably sized volume.
